The Nose
Initially, you’ll be struck by the intense effervescence hitting your nose! Fortunately, the delightful notes emerge as the bubbles settle in the glass.
You’ll detect aromas of baked lemon, grapefruit, white peach, yellow apples, bread, a hint of damp cellar, a touch of fireworks, and white lilies. It’s truly impressive considering it’s crafted in Germany rather than Champagne!
The Palette
The initial experience with the palette was somewhat disappointing. Despite the commendable high acidity and viscosity, the bubbles were intensely overwhelming, nearly bursting in my mouth. The only noticeable aromas at first were reminiscent of lemon and lemon soda.
However, an idea came to mind—what if I gave it a “tour” in the carafe? This made a significant difference! The bubbles’ intensity was now more balanced, and alongside the initial aromas, new notes emerged: yellow apples, a hint of fireworks, a mineral calcium quality, and honeydew melon. While the palette wasn’t as impressive as the nose, it was still quite enjoyable!
